Turn the average ‘sango’ into a sushi sandwich!
Sushi is a great lunch option for littlies, but can be extremely time-consuming and fiddly to make. Instead, try these awesome sushi sandwiches that you can get your kids involved with too. It’s sure to get their attention come lunchtime.
Makes: 4 sushi sandwiches
4 slices of bread
1 carrot, julienned
1 cucumber, julienned
2 hard-boiled eggs, diced
2 cans tuna, drained
2 tbs mayonnaise
1 sheet of Nori (Japanese seaweed), slice into four lengthways
Cut crusts off slices of bread.
Mix diced hard-boiled eggs, mayonnaise and tuna in a small bowl. Spread a quarter of the mix evenly over each bread slice.
Place a few pieces of sliced cucumber and carrot on top of the tuna along the middle of each slice of bread.
Take one of your slices of bread. Fold one edge over the ingredients to meet the opposite edge. Wrap Nori around and secure with a toothpick. Repeat with remaining three pieces of bread. You could also use lettuce instead of Nori.
Oishii!! (delicious). You now have sushi sandwiches. Serve on a bamboo placemat and plate with chopsticks or in a bento box for a traditional Japanese look.
Tip: Have fun using alternative ingredients in your sushi sandwiches, such as curry egg and teriyaki chicken.
