Chickpea Cookies For Kids

Super-easy sugar-free cookies with a surprisingly delicious secret ingredient.

This is a great healthy recipe for kids to get involved with. The secret ingredient – chickpeas! Who knew they could be so versatile. They don’t cook all the way through, which means they taste like cookie dough in a baked shell – gooey and delicious. Everyone I’ve shared these with has loved them.

Makes: 14-16

Ingredients

1 can chickpeas, drained
½ cup natural peanut butter
⅓ cup rice malt syrup
¼ cup chocolate chips
¼ cup peanuts, crushed
1 tbs vanilla essence

Method

Preheat oven to 160°C fan-forced, and line oven tray with baking paper. Combine chickpeas, peanut butter, rice malt syrup and vanilla in food processor and mix until smooth. Stir through chocolate chips and peanuts. Spoon mixture into dollops the size of a 50 cent coin onto tray. Bake for 20-25 minutes.

Tip: The biscuits won’t go hard or crunchy because they contain chickpeas, but they’ll get a slight golden tinge when they’re ready. Don’t worry if they’re undercooked – who doesn’t love cookie dough?
