Chocolate Cinnamon Doughnuts

We love a good doughnut – a fun treat to inspire the kids to bake!

Makes: 16 doughnuts

Ingredients

2 cups plain flour
2/3 cup brown sugar
1 cup vanilla yoghurt
60g unsalted butter, melted
2 tsp baking powder
1 tsp bicarbonate soda
½ tsp ground cinnamon
3 eggs
Sprinkles of your choice to decorate

Ganache

100g white chocolate
100g dark chocolate
60g unsalted butter
4 tbs cream

Method

Preheat oven to 180°C. Spray doughnut mould pan with non-stick spray. In a large bowl, mix together flour, baking powder, bicarbonate soda and cinnamon. In a separate bowl, whisk together eggs, brown sugar and yoghurt. Add melted butter and pour into dry ingredients. Stir until just combined.

Spoon batter into doughnut moulds, or use a large disposable sandwich bag, snipping of one corner to pipe out mixture. Fill moulds to about three-quarters full. Bake for 10 minutes, until edges of doughnuts are slightly brown. Remove from pan and bake remaining batter. Allow to cool before glazing.

To make the ganache, place white chocolate in a bowl with half the butter and cream, and dark chocolate in a separate bowl with remaining butter and cream. Melt each bowl in the microwave, one at a time, in 30 second bursts on medium heat, until chocolate is smooth and melted.

Dip tops of doughnuts in chocolate ganache and cover with sprinkles.
